Help

Monday is usually my "throw together something that resembles a rough menu plan for the week" shopping day. I hate Mondays. I am not creative with planning meals and since my family is so picky that makes it even harder. The only vegetables they will eat are corn, green beans, lima beans, black-eyed peas, and potatoes. My kids will also eat carrots provided they are cooked in lots of butter and sugar! So, we wind up eating a lot of spaghetti, Hamburger Helper, and chicken casseroles. For side dishes, we have a lot of rice, salad, green beans, and corn. I don't cook a lot of potatoes because if I do that is all Caitlin will eat. She has a real potato fetish!

Ideally, I'd like to have a set menu that I can rotate every couple of weeks (kinda like the school menu) so I don't waste a lot of time looking for recipes and making shopping lists. Hopefully I would get in the habit of keepings the items I need on hand rather than getting ready to cook and realizing I'm missing one key ingredient. Grrr!

This is where I need your help. What kind of meals do you fix often? What do your kids like? How do you make sure that you're serving nutritionally-balanced, healthy meals? If you have any favorite recipes, would you share them and let me know what side dishes you serve with it? I thank you and my family thanks you!

one thing I like to fix is Parmesan Chicken....You buy the box of Parmesan Crusted Shake N Bake and the thin sliced chicken and some noodles and spaghetti sauce and woila(sp?)

Also Leann's pizza spaghetti bake

noodles spaghetti sauce meat pepperoni and cheese (super easy)

homemade pizza (buy the martha white pizza mix, the walmart pizza sauce, meat and cheese)

You see a theme with my meals?????????

I don't know about nutrionally sound, healthy meals but here are a few things we like. You may already make these things and just didn't mention them.

Taco ring. Open face tacos...served over chips, w/rice, meat, cheese dip and any thing you like. Grilled salmon w/rice and salad. Breakfast for supper..omeletes, waffles, old-fashioned breakfast. Chili. Chicken pot pie...great b/c veggies are included. Mer's crockpot lasagna. Quesadillas.

Just got new recipe from my sister at allrecipes.com for Deer Chop Hurry. It is a crockpot recipe for deer steak or you could probably use round steak.

I'm no help here. I'm with you. Hamburger Helper and Chicken Nuggets are about the extent of things around here. When you get this all figured out...you pass along all your new-found knowledge!

Hmm...I fix a lot of stuff "from scratch", but it's stuff that doesn't take forever in the kitchen. But lately those have become less and less b/c they're sometimes more expensive. Zoe LOVES homemade enchiladas(chicken, beef, ect) with mexicorn and some sort of mexican rice. Another thing I like to do is get those prepackaged seasonings (I think they're on the pasta isle). I make sloppy joes, bbq chicken, chicken alfredo, tacos, burritos, etc. There are endless possibilities. Throw a veggie and possibly another side dish in there and you've got a full meal. Casseroles is something else that I've found can "hide" veggies and things kids don't normally eat. Also homemade pizza...they have the pillsbury pizza dough or box pizza dough, or you can make it from scratch. I like to use the website www.allrecipes.com. I have a recipe box full of stuff.
